Easy Vanilla and Cinnamon Rice Pudding

       
 There's nothing like the creamy , sweet comfort of homemade rice pudding .The brown sugar in this recipe lends a caramel like sweetness ,while cinnamon and rum soaked raisins add warmth and depth . Either cinnamon will work in this dessert , but true cinnamon makes a more harmonious match .

Cinnamon rice pudding offers more health benefits than other desserts ,such as custard or ice cream.With fewer calories than other dairy treats , rice pudding offers around 4 grams of protein per 1/2 cup ,a good course of calcium and is low in cholesterol .

Rice pudding can be fairly high in carbohydrate , running anywhere from 20 to 40 grams , depending on the type of rice pudding that you enjoy .Rice pudding also offers a small amount of both vitamin A and vitamin C per 5 ounces serving .

Ingredients
Serves 2
350 ml water or rice milk
100 g organic abort grain brown rice
1/4 stick cinnamon
1/4 pod vanilla
2 tbsp brown sugar
pinch of salt
1 egg
1/3 cups raisins

Method
1 .In a medium sized saucepan, bring the milk , rice and salt to a boil over high heat . Reduce heat to low and simmer until the rice is tender about 20-25 minutes .

2. In a small mixing bowl ,whisk together egg and brown sugar until well mixed . Add a half of the hot rice mixture  to the egg mixture ,a tablespoon at a time , vigorously whisking to incorporate .

3 . Add egg mixture back into the saucepan of rice and milk and stir on low heat for 5-10 minutes until thickened .Stir in the vanilla .Remove from heat and stir in the raisins and cinnamon .

4 . Serve warm or cold.

For something fruity and warm to sweeten winter evening , try the coconut rice pudding with caramelized bananas .

Coconut Rice Pudding with Caramelized Bananas
Serves 4

Ingredients
11/2 cups white rice
1/4 cup white sugar
800 ml coconut milk
2 cups water 
2 large bananas ,sliced
50 g butter
1/2 cup brown sugar
shredded coconut ,to serve

Method
1 . In a large pot mix together the rice , sugar, coconut milk and water .

2. Bring to the boil then simmer on a low medium heat while stirring occasionally for 40 minutes or until the pudding is a thick creamy consistency .

3 .For the caramel bananas put the butter in a pan on medium heat . When the butter has melted add the sugar and mix to combine .

4 . Add the sliced banana mix to cover with the sauce and cook for 1-2 minutes .

5, Spoon the pudding into a serving bowl, top with the caramel bananas and sprinkle with shredded coconut .
