Vanilla Butter Cookies

This very basic cookie is tasty and so easy to whip together when you want something sweet .These are probably one of my favorite cookies to have , buttery and delicious .I like to bake them so they are still soft inside .But bake them a minute or two longer , and you have more of a sugar cookie with a bit of crunch . Ingredients A 75 g unsalted butter 75 g margarine 125 g icing sugar 1 tsp vanilla essence 1 egg  1 g salt 50 g condensed milk B 200 g all purpose flour 50 g rice flour 30 g corn flour 3 g baking powder C melted chocolate for decoration Method 1 . Beat ingredients A till fluffy and light . 2 . Sift ingredients B  and fold in lightly till become a dough . 3 . Roll the dough into 3 mm thickness and cut out desired shapes using a cookie cutter . 4 .Place on a greased baking tray and bake at 180 degrees C for approximately 20 minutes . 5 . Easy Carob Mousse

Carob is a great source of calcium and is wonderful chocolate alternative .It can be used in a various of dishes .This recipe is sweetened with Agave Nectar , making it a low glycemic dessert option for these watching their blood sugar levels . Enjoy these decadent mousse made with Carob Powder . Almond Carob Mousse Ingredients Serves 4 3 ripe avacado 1/4 cup almond butter 1 cup almond milk 1/4 cup Carob Powder 1/4 cup Amber Agave Nectar  Pinch of vanilla powder  Method  Place all ingredients in a food processor or blender . Healthy Mango Granita

   The succulent mango speaks of an Aussie Summer. Perfect eaten on their own , mangoes are also delicious in salads , paired with chicken , in desserts or grilled on the barbecue .         This enjoy  recipe will keep well in the freezer for up to a month , so it is worth making up a batch when mangoes are ripe and inexpensive . Allow to thaw for 5 to 10 minutes at room temperature before serving . Redcurrants Mango Granita Serves 2 Ingredients 2 ripe mangoes  juice of 1 lime  100 ml cold water 4 bunches fresh redcurrants  Method 1 . Cut the cheeks from the sides of the mangoes . I love the lemony essence and the pillowy soft texture of this chiffon cake .This lemon chiffon cake is very light and soft and it's topped a delicious lemon glaze .From breakfast to dessert this chiffon cake will be a crowd pleaser all the time . Here is another simple and healthy recipe for a chiffon cake including tofu !   Ingredients 345 g pack firm silken tofu 3 tbsp agave syrup rind of 2 lemon plus juice of 2 100 g gram or chickpea flour 2 tsp baking powder 2 tbsp water Method 1 . Preheat the oven to 170 degrees C .Line a 500 g loaf tin with baking parchment . 2 . Place the tofu , syrup , lemon rind and juice in a mixing bowl and beat with an electric mixer until smooth and light . This will take 5 minutes . 3 . All the good cookie eaters of the world !These cookies are soft , thick , bricks of chocolate chunks and buttery dough baked into a heavy , milk loving cookie that is my most favorite chocolate chip cookie of all time . These were good and very kid friendly , delicious and chewy , strong enough to hold together in children 's lunches and small enough that you don't feel too guilty sending them to school for a treat . Ingredients 180 g plain flour (sifted) 1 tsp baking powder (sifted) 140 g butter 80 g sugar 1 egg 1 tsp vanilla essence 100 g chocolate chips 70 g chopped walnuts Method 1 .
