Vanilla Butter Cookies

This very basic cookie is tasty and so easy to whip together when you want something sweet .These are probably one of my favorite cookies to have , buttery and delicious .I like to bake them so they are still soft inside .But bake them a minute or two longer , and you have more of a sugar cookie with a bit of crunch .

Ingredients
A
75 g unsalted butter
75 g margarine
125 g icing sugar
1 tsp vanilla essence
1 egg 
1 g salt
50 g condensed milk

B
200 g all purpose flour
50 g rice flour
30 g corn flour
3 g baking powder

C
melted chocolate for decoration

Method
1 . Beat ingredients A till fluffy and light .

2 . Sift ingredients B  and fold in lightly till become a dough .

3 . Roll the dough into 3 mm thickness and cut out desired shapes using a cookie cutter .

4 .Place on a greased baking tray and bake at 180 degrees C for approximately 20 minutes .

5 . Let cool completely before dipping ingredients C as decoration .

Cookies tip:
Ingredients and Measuring
-In general , use the ingredients your recipe calls for .If you use margarine instead of butter ,you might find that the cookies turn out thinner than the butter version .If you use all purpose flour instead of cake flour , you'll find that your cookies are denser and fatter .Using sugar substitutes instead of the real thing can also change cookie texture .This isn't to say that you can't experiment , but if you need perfect cookies now ,it's best to stick to the recipe .

-Make sure your ingredients are high quality and fresh .

-Baking soda and baking powder are different .Double check to make sure you're using the ingredient your recipe calls for .
 
-Measure your ingredients properly , whether by weight or by volume .Baking is a science ,chemical reactions are occurring as you mix and bake the ingredients ,so correct ratios are key !
