Chicken cacciatore is an Italian dish of chicken braised in a tomato based sauce and often includes wild mushrooms .When I first experimented with this recipe , I made it without mushrooms or bell peppers , which are often included in chicken cacciatore . Since then ,I've come to enjoy the dish with mushrooms and bell peppers so have updated the recipe to reflect those additions .If you prefer it without one of these ingredients , please feel free to leave them out .Many people also add green olives which would be great additions as well . Can you tell we are gearing  up for grilling seasons? This has to be one of the simplest chicken recipes for the taste ,grilled or otherwise .This quick chicken dish explodes with flavor .If you can't find ground sumac . just throw in a squeeze of lime juice for the extra tang .It's just basic grilled chicken with a fresh mint and honey glaze .Nothing to it really , but it tastes fabulous .The recipe is set up for whole chicken parts , but you could easily use boneless ,skinless breasts or thighs , just reduce the cooking time .   Ingredients Serves 6 3 tbsp finely chopped fresh mint 4 tbsp honey 4 tbsp lime juice salt and pepper 1/2 tsp ground sumac 12 boneless chicken thighs mixed salad , to serve Method 1 . This chicken spaghetti casserole is low in calories and can make easily be made ahead .The recipe makes two casseroles ,so enjoy for one of dinner and freeze the other for later , or serve as a main course at large family gatherings . Hainanese chicken rice is a dish adapted from early Chinese immigrants originally from Hainan province in southern China .It is considered one of the national dishes of Singapore .
