Crispy fried chicken is one of those foods that makes everyone hungry . It so tasty...I experimented for many years before developing this recipe .It's bits and pieces of hints I had heard over the years .I had many compliments on this chicken .Most of this chicken is dependent on your own taste .It's more a matter of preparation and cooking method . Ingredients                                                       Serves 4 2 tbsp pine nuts,light toasted 2 tbsp chopped fresh parsley 2 tbsp chopped fresh thyme 1 garlic clove, chopped 1 tbsp grated lemon rind  4 large ,skinless chicken breast 250 g / 9 oz fresh cheese ,  salt and pepper twist of lemon and sprigs of fresh      parsley ,to garnish fresh green and red salad leaves ,     to serve .                               I had this idea for a quick creamy chicken dish for a few days now . It was time to give it a shot . The whole family loved it .I'm not joking .Well , I love it ! It was creamy and flavorful .The mushrooms added an additional mean times to the chicken and the gravy went perfect . Chicken cacciatore is an Italian dish of chicken braised in a tomato based sauce and often includes wild mushrooms .When I first experimented with this recipe , I made it without mushrooms or bell peppers , which are often included in chicken cacciatore . Since then ,I've come to enjoy the dish with mushrooms and bell peppers so have updated the recipe to reflect those additions .If you prefer it without one of these ingredients , please feel free to leave them out .Many people also add green olives which would be great additions as well . Can you tell we are gearing  up for grilling seasons? This has to be one of the simplest chicken recipes for the taste ,grilled or otherwise .This quick chicken dish explodes with flavor .If you can't find ground sumac . just throw in a squeeze of lime juice for the extra tang .It's just basic grilled chicken with a fresh mint and honey glaze .Nothing to it really , but it tastes fabulous .The recipe is set up for whole chicken parts , but you could easily use boneless ,skinless breasts or thighs , just reduce the cooking time .   Ingredients Serves 6 3 tbsp finely chopped fresh mint 4 tbsp honey 4 tbsp lime juice salt and pepper 1/2 tsp ground sumac 12 boneless chicken thighs mixed salad , to serve Method 1 .
