Ingredients Serves 4 5 tbsp corn oil 6 tbsp plain flour                                            4 chicken portions 1 onion, chopped 2 celery stalks , sliced 1 green pepper ,deseeded      and chopped 2 garlic cloves ,  finely chopped 2 tsp chopped fresh thyme 2 fresh red chillies, deseeded     and finely chopped 400 g canned     chopped tomatoes 300 ml chicken stalk salt and pepper lamb's lettuce and chopped   fresh thyme, to garnish Method 1 . Heat the oil in a large , heavy-based saucepan or flameproof casserole .
