Overnight Blueberry Coffee Cake

Ingredients
Serves 6

1 egg
1 cup sugar
11/4 cups flour
2 teaspoons baking powder
3/4 salt
1/3 cup milk
3 tbsp butter, melted
1 cup blueberries
2 tbsp sugar
Method
1 . In a bowl , beat egg and 1/2 cup sugar. Combine flour ,baking powder and salt in medium sized bowl .
2 . Alternate adding egg mixture and then the milk to flour mixture , beating well after each addition .
3 . Stir in melted butter.
4 . Fold in blueberries .
5 .Pour into a greased 8 inch square pan , sprinkle with 2 tbsp of remaining sugar .
6 . Cover and refrigerate overnight .
6 . Next morning , remove from refrigerator and put on counter for 30 minutes .
7 .Preheat oven to 350 degrees .
8 .Bake for 35 minutes or until toothpick comes out clean .
Cake baking tips:
Make sure the eggs are at room temperature before adding to the butter mixture , if the eggs come straight out of the fridge ,the butter mixture may curdle .Also add the eggs , one at a time , beating well before adding the next one , this will also help prevent the cake mixture curdling .
It's best to crack the egg into a small bowl before adding to the cake mix , just to make sure the egg is fresh and without any blood .It also makes sure no egg shell gets cracked into the cake .
When adding the flour and milk , add them in alternating batches , and stir gently with a wooden spoon .This is so you don't overwork the flour making a more rubbery cake .
