Spicy Tomato Chicken

This quick and easy grilled chicken kebab recipe is complete with a healthy soy sauce and clear honey .This is a little taste that makes for some easy cooking !


All the heavy lifting for marinating meat is done in advance and then skewers are cooked right before serving .One more positive side of this recipe .Make sure to soak the wooden sticks in water well in advance to prevent burning .

Alternatively , these can be cooked in the oven ,using broil at the end for color is a plus . 
Ingredients

serves 4
500 g  skinless , boneless
chicken breast
3 tbsp tomato puree
2 tbsp clear honey                                               
2 tbsp soy sauce
1 tbsp chopped fresh rosemary
250g cherry tomatoes
fresh rosemary sprigs, to garnish
cooked  rice ,to serve

Method
1 . Using a sharp knife , cut the chicken into 2-5 cm / 1 inch chunks and place in a bowl .Mix the tomato puree honey , soy sauce and rosemary together in a separate bowl , then add to the chicken , stirring to coat evenly .

2 . Soak 8 wooden skewers in a bowl of cold water for 30 minutes to prevent them burning during cooking .Preheat the grill to medium . Thread the chicken pieces and cherry tomatoes alternately onto the skewers and place them on a grill rack .

3 . Spoon over any remaining glaze and cook under a preheated hot grill for 8-10 minutes , turning occasionally , until the chicken is cook through .Transfer to 4 large serving plates , garnish with a few springs of fresh rosemary and serve with freshly cooked  rice .

Grilled chicken skills:
Pound boneless ,skinless chicken breasts first .
The uneven shape of boneless , skinless chicken breasts makes them tricky to grill , but by just spending a few minutes pounding the thicker and thinner , you'll both reduce cooking time and end up with more evenly cooked meat .

Add flavor before grill : The best part of grilling is the ritual of throwing it onto the grill and relaxing with a drink while it cooks .Take a little extra time to inject flavor into the chicken before grilling so you can skip basting and don't to do much work as it grills , and you know the end flavor will be amazing .Try a brine , rub  or marinade - it doesn't have to be fancy at all !
