Healthy Mango Granita
The succulent mango speaks of an Aussie Summer. Perfect eaten on their own , mangoes are also delicious in salads , paired with chicken , in desserts or grilled on the barbecue .
This enjoy recipe will keep well in the freezer for up to a month , so it is worth making up a batch when mangoes are ripe and inexpensive . Allow to thaw for 5 to 10 minutes at room temperature before serving .
Redcurrants Mango Granita
Serves 2
Ingredients
2 ripe mangoes
juice of 1 lime
100 ml cold water
4 bunches fresh redcurrants
Method
1 . Cut the cheeks from the sides of the mangoes . Cut these in half and then slide the knife blade under the skin to remove the flesh . Trim as much flesh from the stone as possible and place all of it in the food processor or blender .
2 . Blend until you have a smooth pulp .Add the pulp juice and water and process for a further 15 seconds .
3 . Turn the puree into a plastic container and place in the freezer .
4 . Every 30 minutes whisk the mixture vigorously with a fork . The sorbet should be ready in 2-3 hours and should appear quite grainy in texture .
5 . Serve in tall stemmed glasses garnished with fresh redcurrants or other fruit .
Ginger Mango Granita
Serves 3
Ingredients
4 cups mango juice , room temperature
2 cups water
2 limes , juiced
2 inch piece peeled ginger , grated with micro plane
1/2 cup superfine sugar
Whisk together all the ingredients in a large baking dish . Freeze overnight until solid .Scrape with fork to serve .
