Easy Carob Mousse
Carob is a great source of calcium and is wonderful chocolate alternative .It can be used in a various of dishes .This recipe is sweetened with Agave Nectar , making it a low glycemic dessert option for these watching their blood sugar levels .

Almond Carob Mousse
Ingredients
Serves 4
3 ripe avacado
1/4 cup almond butter
1 cup almond milk
1/4 cup Carob Powder
1/4 cup Amber Agave Nectar
Pinch of vanilla powder
Method
Place all ingredients in a food processor or blender . Place on high speed until very smooth .Refrigerate and drop with chopped fruits and nuts if desired . Enjoy !
Silken Tofu Carob Powder
Ingredients
Serves 4
4 tsp carob powder
4 tsp very hot water
240 g soft silken tofu
4 tsp rice syrup
4 tsp agave syrup
6 drops pure vanilla essence
freshly ground cinnamon to taste
4 sprigs of mint to garnish
Method
1 . Place the carob in a small bowl , add the hot water and mix well until the carob powder has dissolved .
2. Place the tofu in a medium sized bowl and whisk with electric whisk until it is smooth .
3 . Beat the liquid carob mixture into the tofu , then beat in the rice syrup followed by the agave syrup . Whisk well between each addition .
4 . Add the vanilla essence and cinnamon , whisk just to combine then transfer to glass dishes .
5 . Chill for 30 minutes or up to 2 hours . Serve garnished with a sprig of mint .
