Simple Baked Salmon

         Salmon is one of the most versatile proteins to work with in  the kitchen .It's delicious and universally loved , quite good for you and very easy to prepare . 
         Salmon still retains , it's fancy and festive reputation , even though it is more readily available these days and can be purchased at a decent price point from most grocery stores .
          My favorite way to cook salmon is in the oven with fresh vegetables .Read on for this utterly simple , foolproof way to produce moist , flavorful and luscious salmon fillets .This recipe calls for less than 10 ingredients . That including your fish , and you've probably already got most of these at home . Enjoy with this simple and easy recipe !

Ingredients 
Serves 2


boneless fillet of salmon
small head of broccoli
2 carrots , cut into batons
1 tbsp honey
salt and pepper
lemon and lime wedges to serves
salad leaves

Method
1 . Heat the oven to 200 C/ Gas 6 .

2 . Place the salmon on a baking tray and cook in the oven for 18 - 20 minutes until cooked through .

3 . Stream the carrots for a few minutes then add the broccoli and lightly cook .

4 . Place the carrots and broccoli on a plate and lay the salmon fillet on top . Add the couple of lime and lemon wedges ,honey , salt and pepper for squeezing over the fish .

5 . Serve with some raw salad leaves .

Salmon cooking tip:
 Slow  Cooker : While we often lean on our slow cooker for braising tough cuts of meat , it works equally as well for poaching fish .Cooked on a low setting in a flavorful combination of stock and herbs , or olive oil ,you can poach salmon in the slow cooker in under an hour .The result is a super tender , moist piece of fish , and no more worrying about it turning out dry .
